About the BOYS!!!!

Well I do believe that Syd has had her fair share of posts in this past week..

So, now I get to brag on my boys for a little bit.

All week long my husband has been getting things together for the R.A. Campree they hold every year. He was super excited yesterday when he was packing all the supplies up.

He got T-Shirts for all the kids that were going from out church and he wanted to know if Ty would want to go with them even though he is not in R.A. anymore Ty said yes. I was super proud because usually he doesn't want to spend much time away from me. But, he wanted to go and I was okay with that.

When they got home my husband talked a great deal about all the fun they had and all the different events they had going on. Canoe, Archery, Fire building, Woods Trail and many more. Ty said he had a blast there were boy out there as old as 15 on up playing football and Ty jumped right in on that.

My husband said they had a band out there call the Romans Road Trio and Bro got up on stage and sang with them. I was told he did a great job.

I have to say that I am one PROUD MAMA..

After all the chatter about what they did my husband went to bed and shortly after that we got a phone call from one of the other R.A leaders. LCBC lad members had won some trophies and that we needed to pick them up.

Ribbon day

Earlier this week Syd had ribbon day at school. This was on a Tuesday and well remember they had missed Monday before of my flop. So, she calls me at 9:41 in the morning to let me know that her grade will be getting their ribbon at 11:45. There was no way I could make that. And, plus if I had driven all that way I would have had to check them out of school and they needed to stay.. Sorry I missed Honey..

I didn't hear the phone ringing because I was milling wheat and make bread. (very loud job) So, I didn't make it but, she forgave me anyway.

I am so proud of her.


She is holding a Honor Roll ribbon, Good Citizen ribbon, and the BIG one is 2nd place in the Science Fair.. Way to go Syd Kat... I am so proud of you..

Tuesday was also the day that I had a hair appoint. I am so wishy washy I don't know from one day to the next what I want to do with my hair..

So here is the latest hair style..


I love what my Stylist did.. (Thanks Dear)  I really wanted to do before and after picture because we are going a little dramatic in the back and well I was an emotional wreak and late for my appoint (something I hate being, late). So this is all I have for you now..

I love the hair style it is easy to manage and that is what I need right now. EASY.!!!

Recipe Thursday

Every Thursday I post a new recipe that I have tried this week. Some are from friends, books, or some I just come up with. I love to cook and try different things with all kinds of food.

New Orleans Baked French Toast..

 A tid bit of history on "French" Toast. It can be traced as far back as ancient Rome, A method of taking stale bread and rehydrating it with liquid. The American breakfast known as "French" toast seems to have come from New Orleans, where it was a popular breakfast dish known as pain perdu (lost bread).

3/4 c of Dark Brown Sugar
1/2 c. of butter (unsalted)
2 T. of  light Corn syrup
1 loaf of old or fresh bread.. I used fresh cut it thick as you like.
5 large eggs
1 1/2 c. of whole milk ( i used 1c .of 2% and 1/2 of half and half) we don't drink whole milk
1 t. of vanilla

1. Lightly butter a 13x9x2 inch baking casserole.

2.In a saucepan, stir the brown sugar, butter, and corn syrup over medium heat until the sugar and butter melt, and the mixture is syrupy but does not caramelize, about 4 min

3. Pour the melted mix over the surface of the baking casserole. Arrange the bread slices in the syrup. In a bowl, whisk the eggs, milk, and vanilla to blend. Pour the egg mix over the bread slices. Cover with plastic wrap and refrigerate over night.

4. Remove the casserole from freig. 30 min before baking. Uncover and bake until the bread sliced puff and the liquid around the sides are bubbling, about 30 mins on 350.. Serve hot.

First this was a major hit with the family. I will be making this again and soon..In the past when ever I have had "French" toast I would always but syrup or powdered sugar on it, but this is sweet enough you DON'T need it..

Ortho DAY!!!!

Finally today was the right day.

Everything was perfect when we got to the office the staff was unbelievably nice and compassionate about my daughter's mouth. I was very impressed with them.

Dr. Morris was extremely upbeat and cheery. He just came skipping through the office..
"Hey Sydney. How are you today? We are so glad you are here and now we are going to fix you up.!!!"said Dr.Morris..

The process was very quick, much quicker than what I thought it would be. We were in and out within about 45 mins.. And set for the next appoint..

She looks like she is sleeping but she as actually looking down. I know this must look painful but Syd was doing great..

She sat very still and calm the whole while I was holding her and trying to take pictures.

Voila they are on and we are done.. Great Job Syd. I am so PROUD of you and glad to be your mom.. What a blessing !!!!!!

She is have a little bit of pain now that they have been on for a little while and she didn't get to eat any pizza (homemade) we had for supper and she was bummed out about that..

So, she ate a banana...

Yesterday's Flop

Do you just ever have one of those day were you rush and rush and seem to get nowhere very quickly.

Well, that happened yesterday.. here is what I had planned.  (a little back story first)

Syd was suppose to get braces yesterday at 12:00pm and I had a chiro appoint at 11:00 am. So I figured I would run the kiddos to school hurry home do a little work with Bro and be off again at 10:15 ish. 
My husband said that would not do any good only because I would only be home for an hour or so.. And by the time I checked the kiddos out they would have not been counted present (crazy I know). So, he decided that they should just stay home.. Okay.. I love that idea.

9:00 I get up start breakfast.. Something simple all three wanted something different.. as always.

9:45 ish work on getting Bro doing some school. Memory verse and Bible reading which included all three of the kiddos.

10:00 wash and clean kitchen after breakfast as the kiddos got teeth brushed and socks and shoes on.

10:30 leave for Chiro appoint.. Okay this gets under my skin One lane traffic on 32.. Hello I need to get to Wayc*oss..

11:11 Made it to the Chiro..Yay in and out in 15 mins.. Love it.

11:30 ish  Chik fil a for lunch eat in hurry in the Ortho parking lot.

11:55 walk into Syd's appoint.. Look around and only one person is there. I say we'e here and she says you have the right time but, THE WRONG DAY..

WHAT?!?!?!?  Oh no they missed school for my Chiro appoint.. Duh Arica.

After that is was Wal*art, the mall, off to Ty and Syd's school to pick up missed work. And, on our way home.

What a day. So this morning when I walked Syd into school everyone was asking about the braces she didn't get..

I am the most air headed mom alive.. these days..

So, Wednesday is our   her big day.. (I hope)

The week of Co-op

Is super busy for me. I am the frontier rep now and so I have all these orders that I need to get together before co-op day.

Okay let me tell you a little about what co-op is..

It is where I get most all my groceries.. There is no grocery store it is all done over the Internet and e-mail (which are very important).

But, basically I shop for organic foods that you may or may not find in Waycross. So, one day out of each month I travel to Hinesville and pick up my food. We all meet at a Church where a distribution team will make sure you get all the food that you have ordered. It is organized chaos in there. You will see people moving about all over the place hollering for this and that. Also, there is the wonderful background noise of all the home school children playing. You will see a team of weighers and the measure all the food to make sure you get the right amount. You will see a team of runners these are the people that the food that has been weighed and marked for delivery. Then you will see people who work on getting the grocery part out. Which is like canned goods or other items that don't need to be weighed or cut.

BUSY. BUSY. BUSY.

There are several of us from the home school group here that go and do the co-op thang. There are several reasons why I love the co-op.

~1. I go to the grocery store 50% less. I will spontaneously buy if I have to walk down an isle to get my groceries not in co-op. I have time to mull it over.
~2. I know the food I am getting is healthy and not injected with the bad stuff.
~3. I am able to plan my meals better this way. I have about 3 1/2 weeks to confirm my grocery basket.
~4. I get to meet new and wonderful people.
~5. I also get to hang out with them all day.

Day of co-op.. I usually try to leave the house about 10 mins to 10. Bro and I will load up with our snacks and lunches. We will eat at the co-op. It takes about an hour and some change to get there. But, when I do get there I have to unload my car.

It almost looks like I am moving out.. I have to be honest this back space is pretty packed on the morning of..I pick up for one other person and sometimes I may pick up for two. It just depends on the month and what is going on.

The Day After

Sometimes (if I have time) I will put all the cold food like eggs and veggies and chicken away on the same day. That is if I have time. Usually I don't.
So, if I don't them I leave it all in the cooler and do it the next morning..

I get everything laid out to see what I have and where it needs to go..I got all the lettus washed and cut up. I got all the broccoli washed cut and frozen in containers with enough for a side with one meal.
I separated and cut chicken and wrapped up enough in each package for a meal..

This is 25 lbs of chicken. Boneless skinless Breast and leg quarters.

Organization is a big part for me I need things to be in order so that I can get what needs to be done! Done! I takes me about 2 to  2 1/2 hours to get all the food put away. It calls for another busy day..

But once it is all don't I have 3 1/2 weeks to recoup and do it all over again.

OH HOW I LOVE CO-OP!!!!!

Recipe Thursday



I was very proud of this weeks recipe. I am going to brutally honest.. I have NEVER  been able to cook a descent roast. I mean they have been awful, just awful. You could eat it.. Let's just say you wouldn't starve on it.. Plainly put.

But, the other day while I was at my mama's in laws house we were watching the cooking channel (one that I miss on cable/satellite T.V) and the lady on there was cooking a leg of lamb. Now, I am not going to be cooking that anytime soon.. But, I got to wondering if what she did with the Lamb would work on other meats.

I dug into my freezer and thought OO a roast would be great to practice on..

1 roast of  choice ( I used chuck)
1 pk of brown gravy
1/2 c of water

On the roast I covered the top with this mixture. Mix in a bowl first

4 T. of olive oil
2 T. of season salt
2 T of garlic salt
1 t of pepper..
1/2 of bread crumbs..( I didn't have any of these so I omitted)

Mix well and spread on top of roast. Add your water and brown gravy to the crock pot and stir until mixed will. Place the roast in the Crock pot and cook on low for about 3 hours.. I cooked it on warm for about 6 1/2 hours.. Which ever is best for you..

I will most surely be using this recipe again.... I love to try different things with different kinds of food. I seem to learn a lot when I just throw it all together and pray that it tastes OK.

I severed the meal with homemade biscuit and salad.. My husband wanted rice to go with it.. Oops maybe next time...

All about the kid's mouths

This week has been kinda boring really because when I don't have Ty and Syd there isn't a whole lot that goes one. Bro and I just do school and then play and go to bed.. But, every now and then something happens that I feel is worth blogging about. We miss them so where they are not here..

Ty and I do a lot of texting back and forth.. I used to be so against kids having cell phones, but I have to be very truthful I am so thankful that Ty has one. If not I wouldn't be able to talk to him as much.

God sure does love me...

However, last week and some better part of the month has been a little excitingish..

Back on March the 5th Ty and Syd had dentist appointments.. With some really great Dentists, on our visit Dr. Matt Smith informed me that I may needed to take Syd to the Ortho to check out her cross bite.. That is where her some of her teeth go behind her bottom teeth. He was worried that they would be worn down and perhaps break. Or the possibility if we did one day decide to do braces that there may not be enough tooth left to put the bracket on.

Okay I said we will defiantly get that seen about.  First I asked Syd where would you like to go.. She said Dr. Morris of course.. All we have heard about him is GREAT things.. So, I call on March the 6th get an appointment set up. Great we are not all good to go at Dr. Morris, and then I get a phone call on the 7th from Syd, she has changed her mind that she didn't care where she went and that Dr. Sardo was fine with her. 

Why?    She was really unable to answer at that moment..

So I call and cancel with Dr. Morris and call Dr. Sardo's office to schedule her an appointment there. I called them on March the 8th.  All of this happened on her dad's week..

So, last Sunday when I picked her up we got to talking about the dentist and she tells me that she really wants to go to Dr. Morris..

WHAT?!?!?!?

Okay, so I called Dr. Sardo on Monday and canceled that appointment called Dr. Morris' office  back the very same day and scheduled yet another appointment.. Luckily we got the same one we had scheduled before we called to cancel.

Wow.. I am surprised that we even got into an Ortho after all that...

Good News/Bad News

Syd needs braces ---UUUUgggggg

Only on 8 front/top teeth----Yay.

She will only have to wear them about 6 months... If every thing goes smoothly..(pray)

See where the tooth is behind the bottom teeth. That is what we are going to be correcting..

The black dots on the outside is where the braces are going. The dots on the inside is where the retainer will go..

All of this happens on Monday of next week.  Please pray that every thing will go good for her and with minimal pain..

On Monday March the 12th.. I had to take Bro to the Dentist also. He had a cavity that they wanted to fill. When we got the the office he was ready to go.

I have to say that Bro is the bravest youngin I know to walk into the office sit in the chair and take a 2" needle in to gum and not even cry or whine. 

I was so proud.. When wall was said and done this is what he looked like..

Half of his face was numb.. He cracked my up trying to smile for the camera..  You can tell my his eyes that we was really trying hard too.

Because he was so brave he got two donuts from D.D. One of our favorite snack places..

There is really no news bout Ty.. Just that soon he will need braces too.. Yay..

His baby teeth are taking their sweet time coming out.. But, one his teeth will have graduated to grown up teeth..

Who likes FREE

I certainly do..!!!

For the past few years we have had a swimming pool but, when we got our new home the pool had to come down. And, when we were moving it the posts broken and well the pool was no longer any good.

But, I have to say that it lasted us for a good long while.

So, many months ago my husband and I were "talking" about getting a pool again. We looked at Wal-Mart* and we really weren't sure if we wanted to go with the "cheaper" pool that they offer, or if we were willing to spend a nice chunk of change and get on that would last longer.

Months went by and we would look and talk, and look and talk, and look and talk. But, could never really come up with a for sure answer.

Then one day a fellow from my husband's work got to talking about this pool he had and wasn't sure if he wanted to keep it because his kids never really swam in it much. So, he asked us if we would like to get it.. uuuuu Yeah we would.. What are you selling it for?

NOTHING. I. WOULD. LIKE. TO. GIVE. IT. TO. YOU. GUYS.

WHAT?!?!?!?!?!??!?

YES WE WILL TAKE IT..

This was a nice Resin pools. All we will need to do is buy a liner and hire someone to put it up..

24' round X 52" deep.. Wow that is a big pool.. I personally can't wait until we get that bad boy up!!!

This is something that goes with the pool. I just don't know what it is.. But, my husband does and that is all that matters to me.

OOO these are the stairs.. I knew that one..

Oh look more pool stuff..

I can't wait for the summer I mean the real summer to get here...

Recipe Thursday


This week was one that I really had done last week.. But, I figure it will work anyway.

I will call this recipe

Tomato Pasta Bake.

Let me just first that I had some already cooked hamburger meat and sausage that desperately NEEDED  to be used...(hate to waste)

So as I racked my brain as to what I should do? This idea came to mind. Now, it is not totally just my idea but several other recipes that I have read about and have seen made.

About 1  to 1 1/2 pound of cooked hamburger meat
Venison Sausage about 1/2 pound (cut into small chucks)
About 2 cups of Paste (any of your choice. I used macaroni)
1 Can of Tomato Sauce
1 Can of Diced Tomato

Bake in over until nice and warm.. 350 for about 15 to 20 mins.

Last five mins add your choice of Shredded Cheese..

Place back in oven for cheese to melt..

Scoop and serve..This ended up being a big hit for my bunch.. Yay..One for the books.

Lots to Blog

and so little time. This past week for us has been jammed packed with STUFF.

Do you ever just feel like it all has to come to a STOP!! I wish for small breaks in between things but where is the joy in that?
Busy Busy Busy... Mom of 3. I know 3 doesn't sound like a lot but you three that all need to go here and there and yes 3 is a lot..Ahem MORE please.

Friday night was Date night for us. Central Baptist was hosting this marriage night thang and well. My husband and I loved it.. I was a great night, food was awesome and so was the company. We got to sit with some really great and funny couples. One of whom just joined our Friday home school group. Yay.

We decided that we would defiantly be doing that again.. I recommend it..A good quality couple time. Good music and fellow Christians to hang with.

Saturday was Consignment shop day. I believe I have mentioned before that I am a junkie.. I love to hunt for discounts and cheap USABLE clothes. And I had success of course.

I got my husband 5 pair of jeans, Ty 2 pair of shorts and 5 shirts (3 with collar & 1 t-shirt), and I found for myself 3 everyday wonderful shirts..

66.00.. WOW that was all.. I love it.. Frugal for me.. I have also mentioned I have fallen in love with skirts.. My sis-in-law Danielle gave me a skirt that I just loved. I went and found a nice T-Shirt style blouse to go with it. But, when I put it on is showed where my "unmentionables" were at. I didn't like that. So, I got to thinking maybe the elastic in it is too tight. I will just snip and that should be fine.

No, it was not. The elastic went all the way around the skirt. So now I am thinking that I have just ruined one of my favorite skirts.. Dang...

Then I had a thought (careful that don't come often). I have some old jeans that are too short in the leg but fit great in the waist.. So I just cut the legs off the jeans and folded the top of the skirt down some and sewed them together.

End result.. the skirts is longer and fits better. FANTASTIC. That is what I love to hear..


I hope that the next time I have to improvise I will be this genius again..

Recipe Thrusday



Here we are again and  I am beginning to love, love, love RECIPE THURSDAY!!!!!
They have become so much fun for me and the family. It's great finding out knew tastes that we may actually like.

For last weeks Recipe Thursday. I just want you to know that it was delicious. However, it is a make and eat dessert. I tried it a couple of days later and it was not good. The texture had changed and the pudding really was much sweeter than the first night .. I will make it again..

I did a dumb thing. I turned the book back in that had the recipe in it. But I will tell you these were easy to make.

Chocolate Meringue Drops

2 ex-large egg whites
1/2 of granulated sugar 
6 oz of Melted Semi-sweet chocolate
1/2 t. of Vanilla extract
1/2 t. of Almond extract
1 c. of walnuts finely chopped

In a medium metal bowl beat egg whites slowly add sugar and beat until stiff not dry.

It took several hands to hold the bowl still..

Then in a medium pot melt the chocolate. I use boiler pots.



I added some white chocolate just because I like it and I wanted to..

Once your Chocolate is melted add in your extracts. Then with a rubber spatula mix the chocolate in with the egg mix. Make sure that is mixed well. It will need to be thick.. Then add in the walnuts.
Mix again.

Next put some parchment paper on a cookie sheet and spoon out chocolate mix onto the parchment paper 1 to 1 1/2 table spoons. Preheat oven at 350. Bake for 12-15 min. or until tops are dry. DO NOT OVER COOK.


I don't think I will make these again. I believe I may have let the get to done and so it was more like eating candy then a cookie..

I hope that I got all the directions and ingredents right.. I meant to post this before I returned the book. So if you check it out I will let you know I did all this from memory..

Okee Dokee Atc has come and gone and guess what?

WHAT?

There was  a small nick in the wires under the house Yay!!!!! Nothing major yippee..

He also upgraded our speed to so now we may actually have real live high speed internet..

Yes I am Frustrated

because we have been having lots and lots of Internet trouble. It seems like  everyday I am having to unplug everything and wait a little bit then turn it all back on and reboot.. Blah, so yes I am very frustrated. Because the Internet is also how we watch T.V. I mean HELLO!! I like to sit down and zone out in front of the tube just as much as the next person but, if I am having to constantly  reboot I would rather sit around and pick my nose.  (not really)

So today I callrd them to let them know, so hopefully we  they can see what is causing all this WORK ON MY END.  We pay 80.00 a month for this and I get plum aggravated if I am the one always trying to figure out what needs to be done to get things up and running again. When it goes down I here "MOM" or "ARICA".. I can't get the internet to come up or netflix isn't working againg. Can you fix it?

Of course I can!!

I am not saying that the Internet is my life but, I do a lot of things with it.. LIKE watch T.V., send e-mails, blog, look at my bank account, get recipes, and worksheets for Bro. So, it is a major importance around the Griner household.

A couple of days ago we got some really heavy rain. And, usually our yard floods.

Our land has a good flow when the water hits the ground it all likes to puddle up around the Shop..

This causes for some very messy cars and trucks.

And very wet and unhappy dogs.

But, this little box here is where our phone line runs into the house and well I believe it is getting too much water in it and causes the phone/internet to go down as well. Because during this "nice little" rain our phones/internet quit working altogether.. I am no expert but, that is my opinion..

This lizard are just an accessory to the box. This little box is so close to the ground. This thang could be the problem to everything.. Maybe a simple fix is all it will take..

Taking a moment

to notice this crazy weather we have been having. One day we are at 80 degrees and then the next we are at 60 degrees. I have to say this is insane.
I love both cold and hot weather. But, I just don't know what to prepare for each and everyday. Yesterday was freezing.. The day before was so wet and raining my dogs wouldn't leave their houses. And, the day before that I was drying clothes outside. I mean WOW what a difference in just a few days makes in these here parts.

I laugh only because I get to the point that I am ready to start packing up some of our wintery clothes but, then a day like yesterday shows it ugly little head and boom just like that we are in jeans, coats, and long sleeve shirts.

Just CRAZY....CRAZY I SAY!!!!

A couple of days ago I went to a little shop in Waycross and got some nice summer skirts. I just love skirts.. Any whoot, They are all beautiful and flowy just like I like. Well I got to wear at least 3 of them until I had to resort back to my jean days..

Bad thing is most of my jeans feel as though they don't want to fit anymore. I am not sure if I accidentally put shrinking powder in my laundry detergent or what but goodness! And, I am not the only one having "tight jean" trouble my darling husband is too. So may that is what happened I will need to go and check and to make sure that NEVER happens again.

OR, I could just get back on the treadmill and start working off some of this winter fat I keep trying to put on. Part of me wants  warmth and the other part wants skinnyish.

This is one of those days

where you wish you could go back to bed and wake up just to be able to redo today.

I have to admit I lost it today over a math problem. I can't believe I let anger and frustration get the better of me. I fell in to the temptation to be angry and yell and throw around my mean words.

The problem      x + 8 = 16.

So what is x....? He picked every number than the number it should have been. It took over 30 mins to figure it out. I am not a mom that will spoon feed the answers. I want him to think and try to figure it out. He counted fingers and still couldn't get the right answer.  After all that, he wrote down a 2..I feel like I wouldn't have gotten so mad if he hadn't ever done that problem before. But, not two days ago did he have the exact same problem...

A 2. I was like really...really a 2 after he just told me that 2+8=10..  aahhh.. I was at my whits end at this point.

I am ashamed that I let this math problem get the better of me. I knew better yet I let the aggravation and frustration take over and I let it all out in the open. I fall short each day but, on days like this I just want to crawl back into bed never to show my ugly face again.

I had to ask for his forgiveness today. He told me he loved me. That alone is one of the best things about being a parent even though you lose your cool. They still love you, and want to hug you and kiss you.

I know he is a smart, smart little man and I hate to see him not even try when I know that he can do it.

Spending some much needed time in scripture today. Only to hide His words in my heart so that I may not sin against Him or Bro.

OH Sweet Naptime

how to do I. LOVE. THEE. Let me count the ways.

Nap time is something that never use to happen during the week. I only took one on Sunday. But, now that my husband is on 3rd shift. I must wake Bro at 6:00 o'clock with the others. So, our mornings are busy busy. I use to make him start school right after breakfast and then we would be done by 10 or 10:30. And, I liked those days. I don't do that anymore.

Why?

There is to much going on for me in the mornings now. I need to get laundry going, wheat milled, and all the other things that need to get done before my husband gets home. So, we begin school at 8:30. And, well, by 10:30 he is beat. Yawning barley able to keep his little eyes open.

So, I thought IT would be best to take a mid-Morin nap. We stop school about half way through and he lays down and I let him sleep about 1 1/2 hour.

I used to think I will never let him take a nap in the middle of school, but this is home school and he needs it. Not only for himself but for is mama's sake as well. Because, when I wake him up he is bright eyed and ready to get back to work.

Also, I am able to get some other things done like Blogging, folding laundry, making bread,  and some good ole Arica time. And, if you must know I will sometimes take a nap too. I am not too old.

So in reality I NOW LOVE NAP TIME.. !!!!

Recipe Thursday

The World's Best Chocolate Pudding

4 extra large egg yolks
3/4 c. Granulated Sugar (I use evaporated cane juice..same as sugar)
1/4 c. All purpose flour (I use freshly milled wheat)
3 T. cornstarch
2 1/2 c. of Milk
5 oz. Semisweet chocolate finely chopped
2 oz. of Unsweetened Chocolate Finely  chopped
1 t. of Vanilla Extract
4 oz of White chocolate cut into 1/2 pieces
Whipped Cream for serving

In a medium bowl, mix the egg yolks, sugar, flour, and cornstarch. Add 1 or 2 tablespoons of the milk and mix to make a smooth paste.

In medium saucepan over medium-high heat scald the remaining milk. Remove from the hear and stir into the egg-flour mixture. Pour the milk-flour mixture back into the saucepan and place over medium heat, whisking constantly until it beings to boil and thicken. Reduce the hear to low and cook for 2 more minutes, stirring constantly.Take care not the let the bottom burn. Remove the saucepan from the heat and add the semisweet and unsweetened chocolates and vanilla. Stir until the chocolate melts and the mixture is smooth. Let cool for 5 minutes, then gently fold in the white chocolate pieces just to incorporate.

Spoon the pudding into individual glasses. Cool at room temperature, then refrigerate until serving time. Garnish each serving with a dollop of whipped cream.
